The word Pudding comes from the Old French boudin (sausage), which is a variation of the Latin Botellinus/Botellus (small sausage), and it can be said that it has been referring to this food with fruit, flour and gravy wrapped in casings since its birth.

Black pudding was a favorite of King Henry VIII of England. In 1787, Burns wrote Address to a Haggis, calling Haggis “the great leader of the Puddings!” ”。 In his honor, Burns Supper was celebrated on January 25 each year, and Haggis appeared at each celebratory dinner.

As for why pudding later became a dessert, this is the common trait of human beings, that is, they like sweetness. But before the 15th century, sweet pudding was not available. A large part of this is due to the fact that sugar is a very precious source, and at that time, the most common source of sugar was honey, but only a few members of the royal family could enjoy this hard-earned sweetness. Later, the British Caribbean colonies began to export large quantities of cane sugar, and the price of cane sugar quickly decreased, making it a raw material that could be consumed by the common people. In the second half of the 18th century, the traditional English pudding no longer included meat.

The origins of modern pudding can be regarded as a combination of American pudding and European custard. At the beginning of the 19th century, something called custard became popular in the United States. It is a synthesis of egg and milk and is the closest to the existence of modern pudding. But this is not unique to the United States, and there are similar practices in Europe and Asia. In Europe, there is custard, and in Asia it is called egg tart. Either way, milk and eggs are their souls.
